Here in New England, Baked Cod with cracker crumb topping is standard fare. It is usually Haddock or Cod that is topped with buttery Ritz crackers and it is one of the quintessential dishes of this area with most shoreline restaurants having a version of this on their menu. This is an ridiculously easy recipe which only requires a few ingredients making this not only delicious but so simple to make . . . New England Baked Cod . . . 2 lb cod or haddock (but any mild flaky fish will work) 1 1/2 cu

I was inspired to make this after seeing @healthyishfoods make oven baked cod with a buttery cracker topping. I subbed in salmon, mayo and Skyflakes as my cracker because those are the crackers you’ll find at Casa Tastebud. The mixture with lemon, garlic and herbs is the perfect match with the crispness from the Skyflakes and panko and it adds texture to the buttery salmonIngredients1 salmon filet3-4 tbsp mayo (I used Japanese mayo)1/4 cup crushed Skyflakes (or Ritz crackers for extra butterines
